This weekend it was hot. While the rest of the US was digging itself out of its fifteenth gazillion snowstorm of the season, it was 82 degrees and sunny in Southern California. Shorts and flip-flop weather. Nice!
This unusually warm weekend put me in the mood for a fruit smoothie. I LOVE smoothies! I usually prefer to go to my local smoothie shop and let them do all the work (and cleanup)! A basic fruit and yogurt smoothie is a safe ‘on-the-go’ food for me, because as long as I don’t let them add any weird vitamin shots or soy to it, I can assume it is low in nickel.
Sometimes, however, driving across town for a smoothie is neither practical nor cheap, so I decided to try an at-home version. After a little experimentation I came up with this delicious, creamy smoothie, and it didn’t require a lot of clean-up! Perfect! It's a very sweet, thick, yogurty smoothie. Strawberries, bananas, and blueberries do not seem to cause me any allergy grief, so this passes my personal low-nickel test. Enjoy!
Blueberry Smoothie
1 cup organic vanilla yogurt
1 organic banana
½ cup apple juice
½ cup of organic blueberries
Makes 1 large or 2 small glasses
